Blueberry Oat-Yogurt Breakfast Muffins

These are kid approved by all 3 of mine (1 year old, 4 year old, and 7 year old).

You guys! Is that too many photos? Be honest. I hate when food bloggers post WAY too many photos of EVERY step, and here I am showing more than one. But these look soooo good I’m getting hungry.

Ingredients:

  • 1 1/2 cups oat flour (see my IG feed for a video on how to make this with regular oats)
  • 1 1/4 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup greek yogurt
  • 1 cup almond milk
  • 1 banana
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1 egg
  • 1/3 cup honey
  • Optional: 1 cup frozen blueberries

Directions:

In a bowl combine all dry ingredients. In a blender, blend: banana, greek yogurt, egg, almond milk, vanilla, and honey. Mix into the dry ingredients.

For this recipe I used half as is, and put 1 cup blueberries in the other half. I personally LOVED the blueberry ones best.

Bake for 28 minutes at 375 in greased/floured muffin pan. Or use liners. If using frozen blueberries add 5 minutes to the baking time.

For the kids: I did make a small glaze with powdered sugar, vanilla, and milk.
