Low Carb Cauliflower Frita with Greek Yogurt/Lemon Topper

It’s an awesome post workout meal because it has complex carbs in the cauliflower and tons of protein with the egg and greek yogurt. The lemon/parsley/garlic greek yogurt sauce is absolutely amazing and makes the whole thing.

Cauliflower Frita Ingredients:

  • 2 cups frozen cauliflower rice (I get mine from Costco)
  • 1 egg
  • salt + pepper
  • avocado oil spray (Costco has these in a double pack)

Directions: In a microwave safe bowl, place the 2 cups of cauliflower rice and microwave until hot. Add the egg, salt and pepper and stir together.

Spray a non stick pan with avocado oil. I like this only because you can get an even coating without over doing it. You can also use any kind of oil you like.

Over medium-high heat, put the mixture in the pan and spread out with the back of a spoon. Cook for 5-7 minutes.

Spray oil over the top before flipping it. I cut it into quarters and then flip one at a time as it doesn’t hold perfectly together. Cook another 5-7 minutes. Then plate it!

Lemon Garlic Greek Yogurt Sauce Ingredients:

  • 1 cup greek yogurt
  • Juice from 1 lemon
  • lemon zest from 1 lemon
  • roasted garlic clove smashed
  • salt + pepper to taste
  • chopped parsley sprigs

Directions: Mix all the ingredients together and put on top of your cauliflower frita.
